Post Weekend Update
Had a great day yesterday despite two sick kiddos... Andrew and I drove up to Dillon, CO for some outlet shopping, long lunching and a brisk snow shoe walk on a perfect sunny Colorado day! ( More pics to come...)
Cooked a greek meal on Sunday which turned out to be a disaster...the dolmadas were way too salted with brine ( note to self- always rinse the grape leaves before rolling) and the spanikopita tasted like a bottle of bitters! Here's a tip- DON'T EVER SUBSTITUTE ARUGULA FOR SPINACH! The Hummus came out good as did the tahini sauce so at least we had something to cover the flavors up with.

Well hey! At least you showed off your quilt at the meeting! So, you're totally domestic! ;-)
Spanikopita is my favorite and yes, filo is not pretty to work with!
PS: It helps if you put the filo dough between two slightly damp towels. I'll get more details from my husband (you know I don't cook!) if you're interested !
